Good ot bed, wine has aways played a central role in the gastronomic culture of the people of central Italy. Until very recently, a meal without wine was unthinkable. (Breakfast is not a meal; it is a punishment for walking up.) Wine was like bread – a “must-serve”. On the other hand, the taking of dry table wine outside mealtime was, and is, almost unthinkable, unlike in countries of the north, where alcohol is primarily consumed on its own, or at most with a snack. And Italian people tend to like wines that harmonize with food (which they take very seriously).
